What do you do when you have some fabulous vine ripe tomatoes, wonderful vegetarian Mozzarella, and a big bunch of garlicscapes? Those of you who are farmers market groupies like me, probably already know what garlicscapes are. For those of you who don’t here goes —
The scapes are the flower stems that garlic plants produce before the bulbs mature. Growers often remove the scapes to push the plant’s energy toward bigger bulbs, and when harvested while they are young and tender, the scapes are delicious.

I have learnt to use it in a plethora of recipes. This is one simple and delicious dish you can make with garlicscapes. A quickie and a real winner!
Garlicscapes Caprese Recipe
(Serves 1 large bowl for lunch, or 2 cups as a side salad)
2 cups cubed tomatoes
1 cup cubed Mozzarella
1/4 cup finely chopped garlicscapes
2 tablespoons finely chopped basil
2 tablespoons hi quality olive oil
1 tablespoons high quality balsamic vinegar reduction
1/8 tsp sea salt
1/4 tsp freshly ground black pepper
Add al the ingredients and mix well.
Let it sit for 30-45 minutes before serving
Leftovers and/or a finer chop of this also serves as a fabulous topping for bruschetta!
